Korean Pear (Bae) (배) is a large and fragrant fruit native to China, Korea, and Japan. The pears are much larger and rounder than other varieties — closer in shape to an apple — and have a brown exterior. The sweet, translucent flesh is very juicy due to a high water content. Korean pears are much crispier and juicier than Western pears, which tend to have a buttery texture.

The pears make for a delicious snack and light dessert, of course, but they are also a great meat tenderizing agent. Their juice is frequently used in marinades for bulgogi and galbi.

Sourcing & Selecting

Korean pears are available at Korean supermarkets. The best ones give off a really sweet scent.
Bosc Pears can be used as a substitute, but they may not work as well when used as an ingredient in Korean dishes.
