Glass noodles ("Dangmyeon") are also known as cellophane noodles or Chinese vermicelli. Korean glass noodles are made from sweet potato starch and look transparent and glassy when cooked. They are usually sold in dried form and needed to be boiled or soaked in water for a while before cooking. They are used as a main ingredient for a very popluar dish, "Japchae" (stir-fried glass noodles) and also used to make Korean dumplings. Their texture is chewier and more elastic than other kinds of noodles, which makes the dish more appetizing and fun!

How to Measure: 
1 serving=100g (a handful when you hold them with your thumb and index finger)
Seal and keep in cool and dry place away from direct sunlight (18ºC ~ 22ºC). You may keep it in the refrigerator during summer.

Option I

Boil 6 cups of water in a pot. When boiling, put 300g of glass noodles and add a little bit of vegetable oil (optional).

Rinse glass noodles twice in cold water.

Sock glass noodles in cold water for 20 min. Drain water through a strainer.
